It all began with experimenting with rhubarb and crumble and sponge. It now gets made as rhubarb slice. Best advice is to get your crumble mix ready and your rhubarb prep’d so you can combine as soon as your sponge is made. So straight out of my ‘lab’ book here’s how to have a go at making your own. As you can see I went large on the crumble! I used finely chopped stem ginger.
